Oatmeal Chicken Cutlets - General Cooking Principles

To prepare delicious meatballs, you need tasty and properly cooked minced meat. Of course, you can buy a ready-made one at the store, but, firstly, you don’t know what exactly is included in its composition, and secondly, cutlets from it are similar to the same convenience foods.

First of all, buy chilled chicken, it doesn’t matter which part you will use to cook the minced meat. You can take just the breast, cutting the fillet out of it, or you can tinker a bit and free the chicken flesh from the bones and skin completely. By the way, if the minced meat contains not only the white part of the chicken, but also the red meat from the shins and thighs, the meatballs will be juicier.

Wash the finished fillet, cut into any pieces convenient for you and twist in a meat grinder or grind in a blender.

The second main ingredient in chicken cutlets with oatmeal is the flakes themselves. There is no difficulty at all with their preliminary preparation. Pour the cereal with water or milk and set aside for a while to swell.

Eggs are generally used as a binder in cutlets, but semolina can also be used.

To make your cutlets really soft and at the same time have a golden brown appetizing crust, first fry them over high heat, then reduce the heat, cover the pan with a lid and simmer a little, adding two or three tablespoons of water.

In addition, add onion, garlic, spices, herbs to the mincemeat - and your chicken and oatmeal cutlets will turn out to be aromatic, tasty and very juicy.

Recipe 1. Chicken cutlets with oatmeal

Ingredients:

• half a kilo of minced meat;

• a third cup of oatmeal;

• a small onion;

• clove of garlic;

• Provencal herbs, spices, salt;

• frying oil;

• egg;

• flour.

Cooking method:

1. Pour oatmeal into a small container, fill with water in an amount of half a glass. After 15 minutes, drain the excess liquid, pour the flakes into minced meat.

2. Peel the onion and chop in a blender. You can cut the onion with a knife, only the slices should be very small so that the onion is fried with minced meat and does not crunch.

3. Rub the garlic.

4. Add the garlic and onion to the minced cereal.

5. Pour spices to taste, salt and a little dried Provence herbs here.

6. Knead the meat for a very long time and thoroughly, beating and tossing it from time to time.

7. We form small ball-shaped cutlets with wet hands, roll them in flour.

8. Spread chicken cutlets on hot oil, fry on both sides.

Recipe 2. Breaded chicken cutlets with oatmeal

Ingredients:

• 800 grams of minced chicken;

• 150 grams of oatmeal;

• salt pepper;

• egg;

• 80 ml of water;

• onion;

• vegetable oil;

• breadcrumbs.

Cooking method:

1. Onion finely chopped, mix it with an egg, water and oatmeal. Set the mixture aside for 20 minutes.

2. We twist the minced meat from the chicken fillet, salt it, and pepper.

3. We mix both masses, minced meat and oatmeal, to ensure that the consistency is homogeneous.

4. We form cutlets from minced meat so that they turn out to be the same size, take the meat with a spoon.

5. Pour breadcrumbs onto a flat plate. We roll cutlets in them from all sides.

6. Lubricate the baking sheet with butter, spread the meat balls with an even layer.

7. Put the baking sheet in an oven preheated to 180 degrees, bake chicken cutlets for 10 minutes on one side.

8. Carefully remove the pan, turn the patties over, lower the temperature to 160 degrees, cook another 10 minutes.

Recipe 3. Chicken cutlets with oatmeal and sour cream

Ingredients:

• kilogram of minced meat;

• a glass of oatmeal;

• onion;

• 250 grams of sour cream;

• 130 ml of water;

• three tablespoons of semolina;

• pepper, salt, coriander.

Cooking method:

1. Peel the onion and rub on a fine grater.

2. Pour oat flakes for 15 minutes with water, wring out, draining excess liquid.

3. Take out the minced meat in a bowl, add chopped onion, oatmeal to it.

4. Add semolina, salt, coriander and pepper to the minced meat.

5. Thoroughly knead the minced meat, let it stand for 15 minutes, so that the semolina swells.

6. Mix again, beating and throwing the bottom of the bowl.

7. Form small oblong flat patties, fry in hot oil on each side for 3 minutes.

8. Put the fried cutlets in a deep pan, pour sour cream.

9. Set the medium heat, cover the pan with a lid, simmer for 5-7 minutes.

Recipe 4. Lush Oatmeal Chicken Cutlets

Ingredients:

• 600 grams of minced chicken;

• onion;

• 200 ml of milk;

• half a glass of oatmeal flakes;

• 60 grams of butter;

• salt pepper;

• vegetable oil;

• flour;

• egg.

Cooking method:

1. Pour half a glass of oatmeal with milk, let them swell for 20-30 minutes.

2. Onion finely chopped into cubes, spread in a pan with butter, fry until soft and light blush. Do not overdo it so that it does not burn out and does not acquire a taste of bitterness.

3. Separate the yolk from the protein. Beat the protein to form a thick foam.

4. Mix chilled minced meat with fried onions, swollen flakes. Knead and beat the minced meat as thoroughly and as long as possible so that the consistency of the finished meatballs is not loose, but plump.

5. Introduce the beaten protein into the minced meat, mix again.

6. We form cutlets of any desired shape, roll them in flour.

7. Pour vegetable oil onto a dry frying pan, heat it. We set the medium fire.

8. We lay out the patties evenly, fry for 3-4 minutes on one side, then turn over and cook the same on the other side.

9. Cook like this until the stuffing is over. Fried cutlets are temporarily transferred to a plate.

10. After everything is ready, put all the patties back into the pan, pour literally three tablespoons of water. Cover with a lid and simmer over low heat until the liquid evaporates - this will make the meatballs especially soft and tender.

Recipe 5. Chicken cutlets with oatmeal and pork

Ingredients:

• 300 grams of minced chicken;

• 300 grams of minced pork;

• 100 grams of oatmeal;

• two eggs;

• two onions;

• two cloves of garlic;

• a pinch of soda;

• frying oil;

• 100 ml of mineral water;

• salt pepper.

Cooking method:

1. Fill the flakes with water, leave for 10-15 minutes.

2. Grind onions and garlic, add to oatmeal.

3. In a large bowl, mix both types of minced meat: pork and chicken. It will be better if you make them yourself from the pulp of meat, twisting it through a fine lattice.

4. Beat eggs with pepper and salt.

5. put the soaked cereal with onions and garlic, eggs in the minced meat.

6. And now the most important ingredients, thanks to which the cutlets will turn out to be very soft, juicy and tender - these are soda and mineral water. We extinguish soda with mineral water directly above the minced meat.

7. Stir the minced meat thoroughly, kneading it for a long time so that the mass is homogeneous.

8. We fashion a large meat ball, wrap it in film, put it in the refrigerator for 30 minutes.

9. We mold small cutlets from chilled minced meat, fry them in oil on both sides for 5-6 minutes until ruddy.

Recipe 6. Chicken cutlets with oatmeal and cheese

Ingredients:

• 700 grams of minced meat;

• egg;

• two potatoes;

• 100 grams of cheese;

• 100 grams of oatmeal;

• three tablespoons of mayonnaise;

• sunflower oil;

• flour;

• salt pepper.

Cooking method:

1. So that the oatmeal softens and is ready for use, fill them with a small amount of water, leave it for 10-15 minutes aside.

2. We put the minced meat in a bowl, drive the egg into it, mix.

3. Peel the potato and rub it on a very fine grater, squeeze it from the liquid. Add to the minced chicken.

4. Seasoned oatmeal with salt and pepper, mix with mayonnaise.

Oatmeal Chicken Cutlets - Tips and Tricks

• Do not forget to soak oatmeal, otherwise they will crunch in ready-made cutlets, and the cutlets themselves will turn out not juicy and magnificent, as we would like, but harsh with an incomprehensible consistency.

• Your meatballs will be lush if you add soda by extinguishing it with lemon juice or mineral water.

• Cutlets are tasty and with a pleasant creamy taste if they are fried in butter or a mixture of vegetable and butter. You can also use cooking oil or ghee.

• Minced chicken is cooked very quickly, so you don’t need to overdo it on the fire, just fry for 3-4 minutes on one side and the same amount on the other. But if you are not sure that your cutlets are ready, pierce them with a fork or knife, transparent juice flows - it means that you can definitely serve it to the table.

• Onions are almost always added to minced meat, it makes cutlets softer and juicier, but if you do not like its taste, put it in a chopped or fried form, so it is not felt in the finished product.

• Chicken cutlets with oatmeal can be served with any traditional side dish of your choice. It can be pasta, cereals, vegetables, salads, vegetable slices or mashed potatoes.
