Lazy chebureks - basic principles of cooking

The filling for lazy pasties is prepared in the same way as for ordinary ones. You can use any minced meat to your taste: pork, mixed, beef or chicken. So that the pasties do not turn out dry, a lot of onions are added to the filling. It is crushed through a meat grinder or in a blender. For flavor, spices and fresh or dried herbs are placed in the filling. The filling can be not only meat, but also cottage cheese, potato, etc.

Most of the time is spent kneading and rolling the dough. Instead of dough, thin Armenian pita bread, wafer cakes or sheets for egg rolls are used instead of dough to prepare lazy pasties. You can also knead batter.

Pita bread is cut, meat filling is placed in one half and covered with a second layer of dough. Chebureks make, as a rule, triangular shape. If lazy pasties are made from wafer cakes, then minced meat is evenly distributed on one cake and covered with a second cake. Press lightly and cut into triangles.

Lazy pasties are fried in well-heated vegetable oil until golden brown and spread on a dish covered with napkins.

Recipe 1. Lazy chebureks with pita bread

Ingredients

any meat - 300 g;

salt;

thin Armenian pita bread - six sheets;

freshly ground pepper;

vegetable oil;

onion - three heads;

dill, parsley and cilantro - a large bunch.

Cooking method

1. Rinse the meat, clean from films and veins. Cut into pieces and grind with a meat grinder.

2. Peel the onions, wash, cut into four parts and put in the blender's container. Rinse a bunch of greens, dry them slightly on a napkin and send after the onions. Mix everything into small crumbs, not reaching the state of mashed potatoes. Transfer the onion and herbs to a deep bowl.

3. Add minced meat to the onion. Season with salt and pepper. Stir with a spoon until smooth.

4. Cut each sheet of pita bread into equal squares. Each cut into triangles. It is very convenient to do with kitchen scissors.

5. On one part of the triangle, lay evenly a little meat filling. Fold the triangle in half, covering the minced meat with the second part of the dough. Press lightly with your palm. Stuff the minced meat that has come out carefully with a knife or fork. So do all the workpieces.

6. Heat vegetable oil in a cast iron skillet. Put our triangles into it and fry until golden brown. Turn over and fry for the same amount of time. Serve hot.

Recipe 2. Lazy pasties on batter

Ingredients

300 ml of fermented baked milk;

onion - four heads;

two eggs;

300 g of boiled meat;

5 g of dry yeast;

5 g of table salt;

300 g flour;

sunflower oil;

10 g granulated sugar;

250 ml of warm water.

Cooking method

1. Prepare the dough. To do this, combine 100 ml of warm fermented baked milk with 5 g of sugar and yeast. Stir and heat for a quarter of an hour.

2. In a separate cup, combine the remaining fermented baked milk with eggs, 5 g sugar and salt. Stir and add ready-made dough. Stir again. Add flour a little and knead the dough, the consistency of homemade sour cream. Pour in warm water and mix. The result should be a dough like kefir. Cover the dish with the dough with a clean towel and leave to come.

3. Cut the boiled meat into small cubes.

4. Peel, rinse and chop finely. In a cast-iron skillet, heat the vegetable oil. Put the onion in it and fry until golden brown. Now add the boiled meat, season with pepper and salt. Stir, keep on fire for a couple of minutes and cool.

5. Pour a couple of tablespoons of sunflower oil into the bowl with the dough and mix.

6. Pour a little oil into a preheated cast iron pan. The fire should be slightly more than average. Pour some dough into it to make a small pancake. When its edges are browned, put a little filling on one side and cover it with a second half. It should turn out in the form of a semicircle. Press lightly and continue to fry for another minute. Then turn over and fry for a couple more minutes.

7. Put the pasties on a plate, covering it with a napkin. Cool slightly and serve with milk drinks or tea.

Recipe 3. Lazy pasties with waffle cakes

Ingredients

three waffle cakes;

freshly ground black pepper;

half a kilogram of minced meat;

sea ​​salt;

three eggs;

a glass of flour;

large onion head.

Cooking method

1. Cut each wafer cake into equal squares.

2. Peel and chop the onion head as small as possible. Combine the onion with minced meat, season with pepper and salt. Shuffle.

3. On each square, lay out a little meat filling and evenly distribute it around the entire perimeter.

4. Take two small squares and connect their forcemeat to forcemeat. Press lightly.

5. Beat the egg with a fork until smooth. Pour flour into a separate plate.

6. Dip the square in the egg. Then remove and roll in flour.

7. Put the workpieces in a pan with hot sunflower oil and fry on both sides until golden. Cool slightly and serve with drinks or instead of bread to the broth or soup.

Recipe 4. Lazy Chebureks

Ingredients

300 g flour;

300 ml of boiling water;

salt;

half a kilogram of minced meat;

lean oil;

large onion head;

garlic - two cloves

Cooking method

1. In no case do not change the proportions of boiling water and flour. These two ingredients should be exactly as many as indicated in the recipe. So, sift the flour into a deep bowl. Carefully pour boiling water and begin to quickly knead first with a spoon so as not to burn yourself, and then with your hands. Cool the dough completely.

2. We clean the garlic and onion head. Put in the blender's container and interrupt. Add the garlic-onion mixture to the minced meat. Season with spices and salt. Knead with a spoon.

3. Roll out the dough into a thin layer, sprinkling the surface with flour. Evenly distribute the meat filling over it. We turn the dough into a roll. Cut into slices, two centimeters wide.

4. Each piece is rolled in flour and sent to a cast-iron frying pan with heated vegetable oil. Fry until light brown, then turn and fry for the same amount of time on the other side. We spread the finished pasties on the dish, covering it with a paper towel. Serve by cooling to a warm state.

Recipe 5. Lazy pasties with sheets for egg rolls

Ingredients

a pound of ground beef;

coriander;

fresh parsley;

ground black pepper;

a pound of onion;

sea ​​salt;

100 ml of filtered water;

olive oil;

packing dough for egg rolls.

Cooking method

1. Peel the onion, rinse it. Cut half the onion into four pieces and chop as thin as possible. Put the other half in the blender's container, pour in the water and beat to a puree state. Rinse a bunch of parsley, dry on a napkin and chop finely.

2. Add the chopped onion, herbs and onion puree to the minced meat. Knead well with a spoon.

3. Take the test squares. Lay the meat filling on one corner. Brush the edges with water and cover with the other half of the dough. It should be a triangle. Then with a fork, press the edges around the perimeter. So do all the blanks.

4. Pour olive oil into a cast iron pan and heat it well. Put our billets in a frying pan and fry on both sides, one and a half minutes on each. Put the finished lazy pasties on a dish, pre-covering it with a napkin so that it absorbs excess fat.

Recipe 6. Lazy pasties with minced meat, cheese and herbs

Ingredients

two packs of thin pita bread;

300 g of minced meat;

fresh greens;

spices;

100 g of cheese;

sea ​​salt;

egg.

Cooking method

1. Defrost the prepared minced meat and put it in a deep bowl. Cheese coarsely. Wash greens, dry on a napkin and chop finely. Add cheese and greens to the minced meat. Mix gently with a fork.

2. Beat the egg in a separate bowl.

3. Cut each sheet of pita bread in the same squares. Lay on one corner the cheese and meat filling. Brush the edges of pita bread with a beaten egg using a silicone brush. Cover the filling with the opposite end of the dough and fasten the edges of the pita bread.

4. Fry lazy pasties in well-heated lean butter until golden on both sides.

Lazy chebureks - tips and tricks

  • To prevent the edges of chebureks from falling apart during the frying process, grease them with water or a beaten egg.
  • It is advisable not to add water to the mincemeat, as the pita bread can become soaked and it will be difficult to transfer it to the pan.
  • To make the chebureks juicy, observe the ratio of onion to minced meat 1: 1.
  • Onions must be chopped very finely, or chopped in a blender.
