Rassolnik is a very satisfying and fragrant soup on meat broth, in which there is an unusual cereal - barley. However, this is completely optional.

There are a lot of recipes for pickle. The most interesting are collected here.

Rassolnik - general principles of preparation

In the classic version, the soup is cooked in meat broth. But you can use a bird, there are lean recipes with vegetables and mushrooms. Barley is always prepared separately, since slimy substances are released during cooking, which can ruin the broth. In order not to cook the cereal for a long time, it is important to soak it in advance, this requires at least 3-4 hours, but it is better to pour cold water overnight.

What else is added to the pickle:

• potatoes, onions and other vegetables;

• tomato or tomatoes;

• herbs, spices, laurel.

Soup is cooked most often in a saucepan, but you can also use a slow cooker. On average, it takes about 3 hours to prepare a meal. If the recipe is for lean soup, then one hour is enough, but subject to preliminary soaking barley. Served with pickle with herbs, sour cream, the soup goes well with garlic, hot pepper.

Classic pickle: a step-by-step recipe with a detailed description

Step-by-step recipe for pickle with pearl barley and tomato sauteing. It was such a soup that was once coined and is still the most popular.

Ingredients

• 400 g of meat with bone (beef, pork);

• 3 potatoes;

• 2 handfuls of pearl barley (medium);

• a pair of onion heads (1 per broth);

• 3 barrel cucumbers;

• 1 carrot;

• 50 g of concentrated paste;

• greens, seasonings, garlic (quantity to taste).

Cooking

1. Pour the meat with three liters of water, add one whole onion, send the broth to cook.

2. In another saucepan prepare barley. Soak the cereal in advance, fill it with cold water and cook until soft, but you need to make sure that the grains do not become sap and retain their elastic shape.

3. Once the meat is cooked, strain the broth and re-place on the stove.

4. Cut the potatoes, run into a boiling meat broth, add salt, but a little bit, remember the cucumbers.

5. Onion, which remained, cut into small cubes and fry in a skillet, any oil, after a couple of minutes, we throw coarsely grated carrots. As soon as they are browned together, you can pour the chopped or grated cucumbers. Stew the vegetables together for ten minutes.

6. Pour a little water into the concentrated paste, stir and send to the vegetables for five minutes, stir.

7. At the same time, add barley to the potato.

8. We shift the vegetable passerovka with tomato into the pan. Now we reduce the fire, weary for ten minutes.

9. The meat that was previously removed from the pan, cut into pieces. It can be returned or put in each plate.

10. Try the pickle. To taste, salt, pepper, throw crushed garlic and herbs. Done!

Lean pickle: step by step recipe with barley

If there is no time or meat is not laid, then you can cook lean pickle, as in this step-by-step recipe.

Ingredients

• 120 g of barley;

• 3 potatoes (large root crops);

• carrots, onions and peppers - all 1 each;

• 3-4 tomatoes;

• 3 tablespoons of oil;

• 2-3 cucumbers;

• greens, peppers, laurels.

Cooking

1. The longest is cooking barley. Therefore, the soaked cereal is immediately poured with water and sent to the stove. Then we put a pan with 2.5 liters of water and begin to prepare other ingredients.

2. Peel and cut two potatoes, and also free the third from the peel, but rub. We immediately throw it into the pan, the chips will be digested, go into the broth, it will be tastier. After boiling, toss the pieces of the remaining potato, add salt.

3. We put a frying pan on the stove, pour in vegetable oil. Put the chopped onion, carrot and fry.

4. Grate cucumbers, pour over vegetables, cover and simmer for about five minutes.

5. Grate the tomatoes, pour into the pan, cook without a cover for another five minutes.

6. To the almost boiled potatoes, pour the finished pearl barley, put the chopped Bulgarian pepper, after boiling, transfer the remaining ingredients from the pan.

7. Boil everything for a couple of minutes, throw spices, herbs and turn off.

False pickle: step by step recipe with rice

A step-by-step recipe for pickle for those who do not like pearl barley or do not want to spend time cooking cereals. Rice is much faster.

Ingredients

• 2.5 liters of any broth;

• 250 g of potatoes;

• 100 g of large rice;

• 80 g carrots;

• 100 g of onion;

• 200 g of cucumbers;

• 50 g of tomato paste (any sauce can be, but more);

• any greens, spices;

• 30 ml of oil or fat.

Cooking

1. Peel the potatoes, cut and pour into the boiling meat broth. We wash the rice, put it in the pan five to seven minutes after the potatoes. Salt and cook.

2. Separately, fry the main vegetables: onions, carrots, then put the cucumbers, simmer under the lid until soft.

3. Tomato bred, so that it looks like ketchup of medium consistency, pour into a skillet. Cooking together for about five minutes.

4. We transfer everything from the pan to the pan, cook together for several minutes, so that the tastes of the ingredients combine.

5. We try, if there is not enough salt of cucumbers, then add more. Pepper soup, season with herbs.

Mushroom pickle: a step by step recipe with pickled (salted) champignons

A step-by-step recipe for a very fragrant and tasty pickle, which is prepared with salted mushrooms. You can use poultry or meat for the broth.

Ingredients

• 3 liters of broth;

• 120 g of barley;

• 200 g of potatoes;

• 200 g of pickled, salted mushrooms;

• 150 g pickles;

• onion and one carrot;

• 3 tomatoes or 2-3 tablespoons of pasta.

Cooking

1. Barley cook until tender, drain excess water.

2. We launch potatoes into the broth, cook until half ready.

3. Put 2 different pans. Pour a couple of tablespoons of oil into each.

4. Cut the mushrooms, put in the pan, start frying. After 2-3 minutes, put the chopped cucumbers to them, cook together for about ten minutes.

5. In the second pan, fry the carrots with chopped onion. We shift to the mushrooms, add the grated tomatoes, simmer together.

6. We transfer boiled barley to the potatoes, boil for a couple of minutes and add everything from the pan. We let it boil quickly, then reduce the heat to a minimum and keep the soup on the stove for a quarter of an hour.

7. We try, salt to taste, ennoble the dish with herbs.

Pickle: a step by step recipe with pickled tomatoes

It turns out that for cooking you can use not only cucumbers, but also salted tomatoes. It turns out delicious with them too.

Ingredients

• 300 g of salted tomatoes;

• 3 l of meat broth;

• 200 g of potatoes;

• 200 g of boiled barley;

• 100 g of onions, carrots;

• oil, spices, any greens.

Cooking

1. In the broth with or without meat, put the chopped potatoes, boil for ten minutes, start the barley prepared separately.

2. Fry the onion until a slight blush in oil in a pan. Grate carrots, add. Cook the vegetables until soft.

3. Remove the skin from the salted tomatoes, chop finely, shift to vegetables, passer for another five minutes.

4. Combine the vegetables and the future pickle in a saucepan, cook together until tender. Season with herbs, spices.

Rassolnik: a step-by-step recipe in a slow cooker

Pearl barley will have to be boiled separately until half cooked, as in a slow cooker along with the main soup this will not work.

Ingredients

• 2 potatoes;

• 1 multicooking glass of pearl barley;

• 4 cucumbers;

• 2 tablespoons of concentrated tomato paste;

• 3 potatoes;

• 2.5 l of broth;

• salt, pickle from cucumbers, seasonings;

• frying oil or fat.

Cooking

1. Cut onions and carrots. We heat the oil in the baking mode, lay the vegetables, cook for about ten minutes.

2. During this time, cut potatoes, cucumbers.

3. First lay the cucumbers and pasta, lightly fry.

4. Add the potatoes, add half-finished barley and fill in the broth.

5. Close the lid, change the program to soup mode. Cooking pickle full cycle.

6. Open, throw spices, herbs to taste, close and let the dish brew.

Pickle: a step by step recipe with smoked meats

Step by step recipe for pickle with smoked meats. You can take ribs, brisket or any other pieces.

Ingredients

• 300 g smoked meats;

• a glass of barley (boiled);

• 250 g of potatoes;

• Bulgarian pepper (1 pc.);

• 2 cucumbers (barrel);

• salt, pepper, parsley;

• 3 tbsp. l Tomato

• carrot, one onion.

Cooking

1. Boil 3 liters of water, pour the chopped potatoes. Cut large. Cook for a couple of minutes and add the smoked meats.

2. Fry chopped onions and carrots, put cucumbers, cook for a few minutes and add the tomato. Pour a ladle of hot broth from the pan, leave to stew.

3. Once the potatoes are almost ready, lay the boiled barley. Solim.

4. After a few minutes, we throw the chopped sweet pepper, then transfer the vegetables in the tomato from the pan.

5. Cover, simmer for ten minutes with a barely noticeable boil.

6. We try, additionally introduce spices, herbs and you're done!

Rassolnik - useful tips and tricks

• The most delicious pickle is obtained from the broth on the bones. If you reduce the cooking time using meat cut into small pieces, the soup will no longer be so tasty.

• The broth is prepared quickly from young meat, but a soup made from the meat of an adult animal is much tastier.

• If the cucumbers are fresh and the pickle is not enough acid, you can squeeze a little lemon juice into the pan or add it directly to the plates. Whole slices of citrus can be used to decorate the soup.

• To cook a bright and saturated pickle, you can add a little beetroot to it. Grate it very finely so that the root crop does not pay attention to itself in the soup.
