Raisin Muffins - General Cooking Principles

The consistency of the test for muffins is semi-liquid. Usually based on dairy products and butter. Instead, you can take margarine, but only high-quality. The taste of baking will depend on it.

Other ingredients of the dough:

• sugar;

• baking powder;

• flour;

• eggs;

For muffins use small molds. They can be made of metal or silicone, the second option is preferable and more convenient. Silicone molds do not need to be lubricated; products come out easily. You can use paper disposable forms. In this case, a special stand is required for stability. Muffins will be baked in it.

Simple kefir raisin muffins

A wonderful recipe for muffins with raisins on ordinary kefir. The dough is kneaded easily and quickly, all the ingredients are simple and affordable.

Ingredients

• flour 0.25 kg;

• raisins 50 grams;

• 0.25 liters of kefir;

• 3 eggs;

• 120 g of oil;

• salt;

• 150 g of sugar;

• ripper 2 tsp.

Cooking

1. Soak the raisins immediately, let them swell for 10 minutes in hot water, wring them.

2. Also, immediately melt the butter, let it stand and cool.

3. The eggs must be broken into a large bowl, in which all the dough will be kneaded.

4. Add sugar, whisk with a whisk for a couple of minutes.

5. Pour in the oil, throw a pinch of salt, continue to stir.

6. We introduce kefir. The temperature of the drink is room temperature.

7. Add the baking powder to the flour, mix, send to the dough.

8. Add raisins at the very end and also stir. For flavor, you can sprinkle some vanilla into the muffins.

9. We lay out the dough in tins. We fill each little thing on 2/3 of height. When baking, the products will rise, become taller and more magnificent.

10. Put the muffins in a stove warmed up to 180. Standard-size products are prepared within 30 minutes. If large molds are used, then the time needs to be increased.

Sour cream raisins muffins

The recipe for the most tender muffins with raisins from sour cream dough. The cultivator can be replaced with half a serving of soda. You can use a slightly acidified sour cream, it will not be worse.

Ingredients

• 0.3 kg of flour;

• 270 ml of sour cream;

• 10 g of ripper;

• 2 large eggs;

• 0.18 kg of sugar;

• 80 g of raisins;

• 90 g of oil.

Cooking

1. This dough is easily and quickly kneaded with a mixer, but you do not need to beat much. We work at low speeds. Turn on the oven immediately, as the dough cooks quickly, warm the oven to 180 degrees.

2. Break the eggs, pour sugar into them, mix for 30 seconds.

3. Add sour cream to the eggs, mix for another half a minute.

4. Add melted butter, pour flour and baking powder in a minute. Or enter half the norm of soda. To neutralize the unpleasant taste, the powder must be extinguished.

5. Pour raisins, stir.

6. We lay out the prepared dough using muffin tins.

7. We send to the oven for half an hour.

8. It is advisable to check readiness at the very end, for this, pierce the central part of one of the cupcakes with a toothpick. The stick should remain completely dry.

Curd muffins with raisins

It is advisable to take cottage cheese for such muffins with an average fat content of about 9%. The fat content of sour cream for the test does not matter.

Ingredients

• 170 g flour;

• 180 g sour cream;

• 100 g sugar;

• 2 eggs;

• 1 tsp cultivator;

• 50-70 g of raisins;

• 180 g of cottage cheese;

Cooking

1. Put the cottage cheese in a bowl, grind until smooth. If the product is dry, it is better to wipe through a sieve.

2. Add the eggs with sugar, then pour the sour cream. Knead it all a couple of minutes. If time is running out, you can beat.

3. Add the flour.

4. Immediately pour a cultivator on it. Stir. The density of the test may not correspond to the norm if the sour cream was liquid or the cottage cheese is weak. If the dough is flowing, then you can add more flour.

5. Enter steamed or regular raisins, make a batch.

6. We shift the dough into molds. We bake until cooked in the oven. Temperature 170, time 35-40 minutes. We look at the color and the readiness of the crumb.

Chocolate Raisin Muffins

Another version of muffins with raisins on sour cream, but this time baking chocolate. Such products turn out to be very appetizing, bright, beckoning with only one look. Powdered dark cocoa powder without sugar, instant drinks will not work.

Ingredients

• eggs 3 things;

• sour cream 150 grams;

• 30 g of cocoa;

• 70 g of raisins;

• 1 tsp cultivator;

• sugar 150 grams;

• 3 tbsp. l oils;

• 180 g flour.

Cooking

1. It is desirable to soak raisins for muffins, so immediately rinse it, add warm water.

2. Mix the dry ingredients. Pour a cultivator to the flour, followed by cocoa. It’s better to sift it all together, for sure to get rid of lumps.

3. In another bowl, combine the eggs with sour cream and sugar, shake everything together until smooth, add a little vegetable oil. If sour cream is above 25% fat, you can cook the dough without oil.

4. Add the flour mixture with cocoa powder.

5. Next pour the raisins, after removing all the liquid from the grapes. Stir the dough for muffins.

6. Put the cooked chocolate mass in the molds.

Raisin milk muffins (basic recipe)

The recipe for a basic test for muffins. You can add not only raisins to it. Such pastries with nuts, candied fruits, chocolate are excellent. The dough can also be used to make one large cake.

Ingredients

• milk 0.5 tbsp .;

• eggs 2 things;

• 100 g of oil;

• sugar 1 tbsp .;

• 2 cups of ordinary flour;

• 1.5 tsp cultivator;

• vanilla;

• 70 g of raisins.

Cooking

1. The oil needs to be softened. To do this, remove it in advance from the oven. We shift in a bowl. You can use high-quality margarine for the test.

• 3 tablespoons of raisins;

• 380 ml of condensed milk;

• 3 tbsp. l sour cream (oily);

• 7 g of ripper.

Cooking

1. Break the eggs into a bowl. Shake a little to break the yolk and combine it with the protein.

2. Add sour cream, stir with a few movements of a spoon.

3. Pour in the condensed milk. Stir again.

4. Now flour is added. To make it easy to connect with the rest of the ingredients, it is advisable to sift. Mix quickly until lumps have formed.

5. The washed raisins and baking powder are immediately poured.

6. The dough is thoroughly mixed, laid out in small tins.

7. These muffins are also baked at 180 degrees until golden brown.

Raisins, Walnuts and Cinnamon Muffins

A variant of a very mouth-watering muffins with an unusual aroma. Of course, walnuts can be replaced with peanuts, but it will not be so tasty.

Ingredients

• sugar 250 grams;

• 300 g flour;

• 2 eggs;

• 130 g of milk;

• 50 g of nuts;

• 2 tsp baking cultivator;

• 110 g of oil;

• 100 g of raisins;

• 0.5 tsp cinnamon

Cooking

2. Add cinnamon, a small pinch of salt and a prescription cultivator to the flour.

• If you need softened butter, and the product is frozen, you can use the microwave. To soften, the defrost mode is suitable.

• You can determine the readiness of muffins without a stick. Just look at the product. If it has moved away from the walls of the elastic form, then it can be removed from the oven.

• Muffins perfectly tolerate freezing. If baking is more than necessary, you can put it in the freeze. For this product they cool well, wrap with cling film, and put them in the freezer. At any time it will be possible to get it, defrost it in natural conditions or warm it in a microwave.
